Just pictures today

When we went to get Dr. Pepper in Dublin, I kept seeing these giant bundles of pink flowers on the side of the road. And I wondered why can't I have any of these in my yard? I mean, I know I kill everything in my yard but these are growing in dusty rocks on the side of country roads that haven't seen rain in weeks.

Does anyone know what they are?



Unfair.

Here's the salsa being made from tonight (recipe posted prior):



Onions, peppers, cilantro in my $20 food processor. Next to the thrift store bread machine, it's been one of my best purchases. Especially since I jacked the arm up and standing around grating cheese makes me want to lop off my arm and lob it into the trash.



The tomatoes before anything gets added. They were in the food processor first.



Yum.



After I grate the Costco-sized brick of cheese, it looks like a little cheese Bundt cake.



When I think of going veg again, it's always a scene like this that reaffirms that, yes, I can do it.

Cucumber Onion Salad

I love keeping a batch of this in the fridge. Sure makes me wish I'd planted cukes this year!

  • 4 thinly sliced cucumbers
  • 1 thinly sliced white onion
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 2-3 teaspoons dried dill or fresh dill to taste

  1. Put the onions and cucumbers together in a container with a good seal (I like to use pyrex with the plastic lids).
  2. In a saucepan, bring vinegar, water and sugar to a boil.
  3. Turn off heat and pour mix over cucumbers and onions and add dill.
  4. Refrigerate 1 hour and serve. To me -- tastes best on day 2. :)
