I love keeping a batch of this in the fridge. Sure makes me wish I'd planted cukes this year!
- 4 thinly sliced cucumbers
- 1 thinly sliced white onion
- 1 cup white vinegar
- 1/2 cup water
- 1/2 cup granulated sugar
- 2-3 teaspoons dried dill or fresh dill to taste
- Put the onions and cucumbers together in a container with a good seal (I like to use pyrex with the plastic lids).
- In a saucepan, bring vinegar, water and sugar to a boil.
- Turn off heat and pour mix over cucumbers and onions and add dill.
- Refrigerate 1 hour and serve. To me -- tastes best on day 2. :)
