Taquitos

Oh, I've been neglecting posting what I cook lately, haven't I? Bad. Bad. I've been so busy lately and it feels like I'm just cooking the same things over and over again. Guess it's time to spice things up a bit.

I make taquitos thusly:

Chop 1 onion and mince 2 garlic cloves and saute in olive oil about 2 minutes. Add 1 pound of ground beef or buffalo (because I'm a nerd, I use hippie grass-fed beef from Maverick Ranch) and brown completely. Add 1/2 cup salsa, 1/2 teaspoon salt, 2 teaspoons chili powder (or taco seasoning), 1 teaspoon of pepper. Let that simmer about 5 minutes.

Nuke a pile of flour tortillas until they're soft and warm. (You could use corn but my kid's allergic to corn so I use flour). In each tortilla, spread 1/4 cup of the meat mix and top with a sprinkle of whatever cheese suits you (pepper jack is fun, but we usually have cheddar or colby around so we use that). Roll the tortilla up tightly and spread on a baking sheet (foil lined for easy clean-up). This is important: Brush the taquitos with oil. Bake at 400 degrees F for 10-15 minutes depending on how crispy you want them. Serve with guacamole, sour cream and more salsa.
