- 1 tablespoon olive oil
- 1 bunch spinach, cleaned and stems removed
- salt and pepper to taste
- vinegar of your choice to taste
- Heat oil over medium to medium high heat in a deep, nonstick frying pan.
- Add spinach and turn constantly for about 2 minutes.
- Add salt, pepper and vinegar to your liking and serve.
Note: I’ve used apple cider vinegar and balsamic vinegar and both were great. Just a splash will do it. Also, it looks like a ton of spinach but when it wilts down you’re left with about 2 good servings.
